How To Make Stuffed Peppers

Stuffed Peppers Recipe. A delicious though basic recipe for stuffed peppers which has endless possibilities, including vegetarian options.

Serves:   4
Preparation Time:   40 minutes
Cooking Time:   1 hour
Total Time:   1 hour 40 minutes
Oven Temperature:   180° c  -  360° f



Step 1: You will need

    4 medium sized peppers
    250 g long grain rice, cooked
    250 g minced beef
    1 large onion, minced
    4 cloves of garlic, minced
    1 tsp cumin
    1 tsp paprika
    2 tbsp parsley
    salt and pepper
    2 tbsp basil
    2 cans of chopped tomatoes (800g each)
    4 cloves garlic, minced
    1 onion, finely chopped
    2 tbsp basil
    Half tsp chilli flakes
    1 tsp sugar
    4 tbsp olive oil

    2 saucepans
    1 wooden spoon
    1 spoon
    1 hand blender
    1 chopping board
    1 knife

Step 2: Make the sauce

Place the saucepan over a medium heat and add some oil followed by the onions.

Gradually sweat the onions, stirring occasionally, until almost transparent.

Next, add the garlic and cook for about a minute

Now add the cans of chopped tomatoes, followed by the sugar and chilli flakes, and season with salt and pepper.

Leave the sauce to cook for 10 to 15 minutes.

After about 10 minutes, add the basil and cook for a further minute.

Then using the hand blender, blend the sauce - it should have a thick consistency. Remove from the heat.
Step 3: Make the filling

Heat the other saucepan over a high temperature.

Then when very hot, pour in the oil, add the minced beef and cook while stirring to break the meat up.

When the beef is almost done, add the onion and continue cooking for another 2 to 3 minutes.

Next add the garlic, followed by the rice, then mix it all together well and turn the heat off.

Add the cumin and the paprika. Season with salt and pepper and finally add the basil and parsley. Mix together thoroughly.
Step 4: Prepare the peppers

Preheat the oven to 180ºC/ 350ºF/gas mark 4.

Take one of the peppers and chop off the top and reserve it to use later.

Then, using a spoon, scoop out the seeds.

Repeat the same thing with the other three peppers.
Step 5: Stuff the peppers

Spoon the beef and rice mixture into the peppers until almost full. Press it down to make sure the mixture is tightly packed. Don't over fill them as you need to leave space for the sauce.

Take one pepper and add a couple of spoonfuls of the tomato sauce. Then place it into the saucepan with the sauce.

Repeat the same thing with the other peppers.

Finally, replace the tops and they're now ready to bake.
Step 6: Bake

Put the lid on the saucepan, place in the centre of the oven and cook for about 1 hour.
Step 7: Serve the stuffed peppers

When the peppers are soft, take the saucepan out of the oven and remove the lid.

Then spoon some of the sauce onto a serving dish, arrange the stuffed peppers on top and serve.

The filling for these stuffed peppers can be modified to create an endless variety of choices - next time, why not try a seafood or vegetarian filling?
